Aam Panna (Raw Mango Drink)

Scorching heat, the summer holidays, a chilled glass of a tangy and sweet Raw Mango drink that mum used to make before I headed out to play – all that and more is so synonymous with Indian summer season. This Raw Mango Cooler aka Aam Panna is a summer to-do in almost every Indian household. It reminds me of my childhood in every way. Being a mum of a 2.5 year old makes me relive my summer childhood days with my son with this cooler almost every day.

This thirst quencher is made with green raw mangoes along with spices and tastes absolutely delish. Make a huge batch and you won’t be surprised that it will get over so soon.

RECIPE

INGREDIENTS: (For 6 – 8 people)

  • 3 medium sized Raw Mangoes, peeled and roughly chopped
  • 4 tbsp roasted cumin powder
  • 3/4 cup sugar (you can adjust this depending on your preference)
  • 12 – 15 fresh mint leaves + extra for garnishing
  • 1/2 tsp rock salt (optional)
  • 8 – 9 ice cubes
  • chilled water (according to the consistency you desire)

METHOD:

  • Take the chopped and desseded raw mangoes along with some water and pressure cooker it for 3 – 4 whistles or until its tender and cooked.
  • Once done, let the steam escape and let the mixture cool down completely.
  • Take all the ingredients – cooked mangoes, cumin powder, sugar, rock salt, ice cubes and fresh mint leaves along with some water and blend it to make a puree. (You can store this puree for a couple of days).
  • Take the puree, add some water (depending on the consistency you like for your drink), mix it well and serve in glasses.
  • Garnish with fresh mint leaves, roasted cumin powder and ice cubes and serve.

 

 

Cheese and Mushroom Empanadas

Monsoon therapy with rustic Cheese and Mushroom Empanadas – pure joy! The rains lashing against the window panes, steaming cup of coffee and empanadas – perfect rainy afternoon. Dreamy yummy creations which is bursting with flavors. You have to be crazy to not enjoy these savory pockets!

If that wasn’t enough to lure you to try these out, probably your childhood memories surely will. Remember those vegetable patties and pies you enjoyed at the neighborhood bakery store… oh so delicious! The crisp and flaky pastry and the absolutely gorgeous stuffing…I am already dreaming about it while writing this post. While I was in the US, I often missed those patties until I stumbled upon these hot pockets filled with sumptuous stuffing called empanadas from a famous food truck in San Francisco. It ticked all the boxes for the things I was missing. Homely and satisfying.

I was trying my hands to make empanadas at home and guess what, I  was bursting with ideas. It almost took 1 week for me to calm down and decide about the filling. You can fill the dough with all your favorite things and enjoy these wonders.

RECIPE

INGREDIENTS: (Makes around 14 – 15 pieces)

For the dough:

  • 1 1/4 cup all purpose flour
  • 1 cup whole wheat flour + extra for dusting and rolling out the dough
  • 2 eggs
  • 115 grams butter, cold and cut into 1/2 inch cubes
  • 120 ml ice water
  • 1 tbsp white vinegar
  • pinch of salt

For the filling:

  • 1 medium sized onion, finely chopped
  • 200 grams button mushrooms, chopped
  • 200 grams cottage cheese, grated
  • 1/2 cup mozzarella cheese, grated
  • 1/2 cup spinach, blanched and chopped
  • 4 garlic cloves, finely chopped
  • 1 tbsp olive oil
  • 2 tsp freshly chopped basil leaves
  • 2 tbsp chili flakes
  • salt, to taste
  • freshly grounded black pepper, to taste

METHOD:

For the dough:

  • Take all purpose flour, whole wheat flour and salt in a bowl and whisk it.
  • Using a pastry blender/ 2 forks or using the tips of your fingers, blend the cold butter into the flour mixture until it forms a coarse crumb like mixture.
  • Beat 1 egg, ice cold water and white vinegar in a bowl and keep aside.
  • Add the egg mixture to the flour-butter mixture and using a fork combine the entire mixture. Do not over knead it.
  • Generously dust the kitchen top with flour and transfer the dough on to it.
  • Bring together the entire dough together by gently kneading it.
  • Divide the dough into 2 halves, cling wrap it tightly and refrigerate it for atleast 1.5 hours.

For the mixture:

  • While the dough is resting, take a saucepan on medium heat. Put oil in it.
  • Once its hot add 1 tsp chili flakes and saute for a few seconds.
  • Now add chopped onions and saute it for a minute until it turns translucent.
  • Add mushrooms to the mixture and let it cook for a minute.
  • Now add the remaining chili flakes, salt, black pepper and basil leaves and saute the mixture for couple of minutes,
  • Once done take it from the stove and allow it to cool completely.
  • Once cooled add grated cottage, spinach and mozzarella cheese and form a mixture using a spoon.

To Assemble:

  • Preheat your oven to 230 C for atleast 15 minutes. Line a baking sheet with parchment paper and keep aside.
  • Take the dough out of the fridge. Take some dough and roll it out on a flat surface into round discs of similar sizes ( approximately 6 inch diameter)
  • Take the stuffing and place it on one side of the circle.
  • Take the other end of the dough and form a semi circle. Seal the edges as shown in the picture or by making knife impressions.
  • Once all the pies are formed, beat one egg and using a pastry brush, egg wash the top of the empanadas before they go into the oven to bake.
  • Place the pies atleast 1 inch apart and put it into the oven to bake at 200 C for 18 – 20 minutes, until the empanadas a golden brown and crisp.
  • Serve it hot with a yogurt dip and enjoy!

Vegetarian Mulligatawany Soup

The nip in the air as you open the windows in the evening makes you crave for some soup which is wonderfully soothing and warming. The fresh winter vegetables and the balance of spices and herbs makes a perfect combination for a cozy winter evening. Mulligatawany soup is a soup packed with bold flavors and nutrition. This piquantly flavored soup is a meal in itself and has a complete Indian feel in itself, making it the national soup of India.

I have heard people enjoy the meat version of this soup more, but being a vegetarian I enjoy the veggie version of this soup. The wholesome soup is endowed with lentils, vegetables and spices, making it super easy to cook. It’s my family’s favorite soup (and meal too) and I love to cook it very often. It’s satisfying, it’s delicious and I feel I cannot stop raving about how awesome it is. So make sure to try this recipe as soon as possible.

All-About-Coconut-Milk

You may change the proportions of the vegetables in the soup depending of your palate, but do not omit any ingredient.

RECIPE

INGREDIENTS: (For 4 – 6 people)

  • 1 cup split red lentils (split masoor dal), soaked for an hour in water
  • 4 medium sized carrots, peeled and roughly diced
  • 2 1/2 medium sized onion, roughly chopped
  • 4 tomatoes, roughly chopped
  • 1/2 inch ginger
  • 4 – 5 cloves garlic, finely chopped
  • 1/2 tsp turmeric powder
  • 2 tbsp vegetable oil
  • 2/3 cup unsweetened coconut milk
  • 1 tbsp lemon juice
  • 2 1/2 tbsp curry powder
  • Salt, to taste
  • Grounded black pepper, to taste
  • Cooked rice
  • Coriander leaves, for garnishing
  • Fresh cream, for garnishing

METHOD:

  • In a pressure cooker heat the oil. Add garlic and sauté it until it’s a little brown.
  • Add chopped ginger and onion and sauté it until it’s translucent.
  • Add chopped carrots and tomatoes in the pressure cooker and sauté it for a minute or so.
  • Add the soaked red lentils (drain the water) and sauté it too.
  • Add turmeric, curry powder and mix it well. Next add 5 cups of water and allow the mix to cook for 3 – 4 whistles.
  • Once the mixture is cooked and cooled, pass it through a fine sieve.
  • Take the soup and put on medium flame. Add coconut milk, salt and black pepper to taste.
  • Put some cooked rice in a bowl, pour the soup on top of it and squeeze from lemon juice and serve.
